Ingredients

  • 2 Tbsp. sodium-reduced soy sauce
  • 1 Tbsp. oyster sauce
  • 2 tsp. sesame oil
  • 2 tsp. minced garlic
  • 2 tsp. peeled, minced fresh ginger
  • 1 Tbsp. sake or canned low-sodium chicken broth
  • 1/2 cup thin strips red bell pepper
  • 1/2 cup thin strips fresh shiitake mushrooms
  • 1/2 cup diced fresh pineapple
  • 2 cups cooked brown rice
  • 2 Tbsp. water
  • optional: chopped fresh cilantro

Instructions

  1. In a small bowl, combine the soy sauce and oyster sauce.
  2. Heat a wok or large heavy skillet over high heat until a drop of water evaporates on contact.
  3. Add the sesame oil and heat for about 10 seconds.
  4. Add the minced garlic and ginger; stir-fry for about 10 seconds.
  5. Add the sake or chicken broth, red bell pepper, shiitake mushrooms, and pineapple; stir-fry until peppers are crisp-tender, about 2 minutes.
