Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 to 1/2 cup sugar
  • 8 oz strawberry yogurt
  • milk
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1/2 to 1 cup strawberries, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sift flour and measure.
  3. Sift dry ingredients (salt, baking powder, baking soda) together.
  4. Pour strawberry yogurt into a measuring cup and add enough milk to make 1 cup.
  5. Combine yogurt mixture, vegetable oil, and beaten egg.
  6. Add wet ingredients to dry ingredients and stir until just combined (batter should be lumpy).
  7. Fold in sliced strawberries, if desired.
  8. Fill muffin cups 2/3 full with batter.
  9. Bake at 400°F for 20 to 25 minutes or until golden brown.
