Ingredients

  • 2 cups cooked brown rice
  • 2 cups grated Cheddar cheese
  • 1/2 teaspoon salt
  • 2 cups milk
  • 3 lightly beaten eggs
  • 3 tablespoons chopped parsley
  • 1/4 cup melted butter
  • 1 finely chopped onion
  • blanched almonds or sunflower seeds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine all ingredients except the almonds or sunflower seeds in a bowl.
  3. Pour the mixture into an oiled casserole dish.
  4. Top with blanched almonds or sunflower seeds.
  5. Bake for 35 minutes until golden and bubbly.
