Ingredients

  • 1 cup packed brown sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup thinly sliced fresh rhubarb
  • 1 cup sliced fresh strawberries

Instructions

  1. Preheat oven to 400°F.
  2. Grease an 8-cup Bundt pan or ring mold; set aside.
  3. In a medium bowl, combine brown sugar, vegetable oil, egg, and vanilla.
  4. Stir in flour, baking soda, baking powder, and salt until the dough is completely blended.
  5. Lightly fold in the sliced rhubarb and strawberries.
  6. Pour the batter into the greased pan.
  7. Bake for 25 minutes or until the center tests done.
