Ingredients

  • 3 avocados
  • 1 large carrot
  • 8 oz. peas
  • 8 oz. green beans
  • 1 lb. potatoes
  • 1/4 cup oil
  • 2 eggs
  • mayonnaise
  • 1/2 teaspoon pepper
  • 1 lemon
  • 1/2 teaspoon mustard
  • 1 clove garlic
  • salt

Instructions

  1. Boil the diced carrots, peas, green beans, and potatoes until tender.
  2. Place the eggs in a blender.
  3. While blending, slowly add a thin stream of oil to create an emulsion.
  4. Add garlic, pepper, mustard, salt to taste, and lemon juice to the blended eggs to make the dressing.
  5. Cut the avocados in half and remove the pits.
  6. Stuff the avocado halves with the vegetable mixture and drizzle with the dressing.
