Ingredients

  • 24 uncooked jumbo pasta shells
  • 2 c. spaghetti sauce
  • 2 c. ricotta cheese
  • 1 c. shredded mozzarella cheese
  • 1/2 c. grated Parmesan cheese
  • 2 Tbsp. chopped fresh parsley
  • 1/2 tsp. pepper
  • 2 eggs
  • 1 c. pesto

Instructions

  1. Preheat oven to 350°F.
  2. Cook and drain pasta shells as directed on the package.
  3. Spread spaghetti sauce in an ungreased 13 x 9 x 2-inch baking dish.
  4. Mix ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, chopped parsley, pepper, and eggs.
  5. Fill each cooked pasta shell with about 2 tablespoons of the cheese mixture.
  6. Arrange the filled shells on the spaghetti sauce in the baking dish.
  7. Cover and bake for approximately 45 minutes or until hot.
  8. Serve with pesto if desired.
