Ingredients

  • 1 small hog ponce
  • 3 lb. ground pork
  • 1 large bell pepper, chopped
  • 1 large onion, chopped
  • 2 pods garlic, minced
  • 1 1/2 stems celery, chopped
  • 1 medium-sized sweet potato, cubed
  • 2 slices bread, soaked in milk
  • a handful of green onion tops and parsley
  • salt to taste

Instructions

  1. Clean the hog ponce well.
  2. Use pliers to remove the inner film.
  3. Put raw ground pork and other ingredients into a bowl.
  4. Work well with hands until the mixture is well combined.
  5. Add seasonings such as salt, red pepper, and black pepper.
  6. Stuff the mixture into the ponce.
  7. Sew up the opening to close the ponce.
  8. Place the stuffed ponce in a thick pot with enough oil to prevent sticking.
  9. Cook over low heat, adding a little water from time to time, being careful not to break the skin.
  10. Cover and cook for about 2 hours.
