Ingredients

  • 2 to 2 1/2 lb. pork tenderloin
  • 1 can chili peppers, chopped fine
  • 5 green onions, chopped fine
  • salt to taste
  • pepper to taste
  • garlic powder to taste
  • 2 cups herb seasoned stuffing mix
  • 1 cube beef bouillon
  • 1/2 cup hot water

Instructions

  1. Preheat oven to 325°F.
  2. Dissolve the bouillon cube in 1/2 cup hot water.
  3. Split the tenderloin lengthways without cutting all the way through.
  4. Mix chopped chili peppers, green onions, salt, pepper, garlic powder, herb seasoned stuffing mix, and the bouillon solution together well.
  5. Stuff the tenderloin with the mixture.
  6. Wrap the stuffed tenderloin with strips of bacon, securing ends with toothpicks.
  7. Place in a baking dish and cover tightly with foil.
  8. Bake at 325°F for 1 1/2 hours.
  9. Remove from oven and place on a hot grill.
  10. Grill for 30 to 40 minutes until cooked through.
  11. Slice crosswise and serve hot with gravy or dry as desired.
