Ingredients

  • 4 baked potatoes
  • 1 egg
  • 3 Tbsp. skim milk
  • 1 Tbsp. grated onion
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. grated Parmesan cheese
  • paprika

Instructions

  1. Cut a slice off the top of each baked potato and scoop out the pulp into a large bowl.
  2. Add egg, milk, grated onion, salt, and pepper to the pulp. Beat well until combined.
  3. Spoon the mixture back into the potato shells.
  4. Sprinkle the tops with grated Parmesan cheese and paprika.
  5. Bake at 350°F (175°C) for 20 minutes until heated through and golden on top.
