Stuffed Whole Wheat Shells

Hearty stuffed whole wheat shells filled with a savory beef and wheat germ mixture, baked in a creamy mushroom soup sauce with melted cheese for a comforting meal.

Ingredients

  • 1 lb ground beef
  • 1/2 medium onion
  • 25 to 30 whole wheat shells
  • 2 eggs
  • 1 can chopped olives, drained
  • 1 1/2 cups raw wheat germ
  • 1 can cream of mushroom soup
  • 1/2 to 2/3 lb grated cheese (Cheddar and Monterey Jack)
  • 2 slices whole grain bread, crumbled or 1 slice bread and 1/3 cup bran

Instructions

  1. Parboil the whole wheat shells for 8 minutes, then drain and set aside.
  2. In a skillet, brown the ground beef and chopped onion until cooked through.
  3. Add drained chopped olives, wheat germ, grated cheese, and crumbled bread to the beef mixture, stirring to combine.
  4. Stuff each parboiled shell with the beef mixture and place them in a lightly greased 9 x 13-inch baking pan.
  5. Pour the cream of mushroom soup over the stuffed shells.
  6. Sprinkle Parmesan cheese on top.
  7. Cover the pan with foil and bake at 350°F (175°C) for 20 minutes until heated through and bubbly.
