Ingredients

  • 1/2 cup butter or margarine
  • 2 cups sugar
  • 4 eggs, separated
  • 3 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup hot mashed potatoes
  • 1/8 teaspoon salt
  • 1 1/3 cups milk
  • 2 cups plain flour, sifted
  • 1/2 cup cocoa
  • 1 teaspoon vanilla
  • 1 cup broken nut meats

Instructions

  1. Preheat oven to 350°F.
  2. Cream butter and beat in sugar.
  3. Add beaten egg yolks, vanilla, mashed potatoes, and cocoa to the creamed mixture.
  4. Sift together cinnamon, salt, flour, and baking powder.
  5. Add dry ingredients to the butter mixture, alternately with milk.
  6. Stir in broken nut meats.
  7. Beat egg whites until stiff and fold into the batter.
  8. Pour into a flat cake pan and bake for 50 minutes or until done.
  9. Cool the cake and frost with fudge frosting.
