Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup canola oil
  • 2 large eggs
  • 1 2/3 cups whole-wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 1/2 cups finely grated carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F and lightly grease an 8 1/2 x 4 1/2-inch loaf pan.
  2. In a large bowl, combine brown sugar, granulated sugar, and canola oil; beat for 1 minute.
  3. Add eggs to the mixture, beating well.
  4. In a separate bowl, mix whole-wheat flour, baking soda, salt, nutmeg, and cinnamon.
  5. Add the dry ingredients to the wet mixture and stir to moisten.
  6. Fold in grated carrots, raisins, and chopped pecans.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before removing from the pan.
