Shrimp Deviled Egg Aspic

Ingredients

  • 2 Tbsp unflavored gelatin
  • 1/2 c cold water
  • 2 c tomato juice
  • 1 tsp salt
  • 1 Tbsp confectioners sugar
  • dash garlic salt
  • 1 Tbsp dried onion soup
  • 1 small can washed small shrimp
  • 10 deviled egg halves

Instructions

  1. Dissolve gelatin in cold water.
  2. Simmer together the tomato juice, salt, sugar, garlic salt, and dried onion soup for 15 minutes.
  3. Allow the mixture to cool.
  4. Stir the dissolved gelatin into the cooled tomato mixture.
  5. Add the small can of washed small shrimp to the mixture.
  6. Press the 10 deviled egg halves, yolk side down, into the bottom of a ring mold.
  7. Pour the chilled tomato-shrimp aspic over the eggs in the mold.
  8. Allow the aspic to set.
  9. Unmold the aspic onto a lettuce leaf before serving.
