Ingredients

  • 1 cup raisins
  • 1/2 cup water
  • 1/4 cup margarine
  • 1 teaspoon cinnamon
  • 1 cup flour
  • 1 egg
  • 3/4 cup unsweetened applesauce
  • 1 tablespoon sugar substitute
  • 1 teaspoon baking soda
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a saucepan over medium heat, cook raisins, water, margarine, cinnamon until margarine is melted; continue cooking for 3 minutes.
  2. Add beaten egg, unsweetened applesauce, sugar substitute, baking soda, and vanilla extract to the raisin mixture.
  3. Spread the mixture into an 8-inch square baking pan that has been sprayed with cooking spray.
  4. Bake at 350°F for 25 to 30 minutes or until lightly brown.
