Ingredients

  • 1 cup oats
  • 1 cup flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 egg or 2 egg whites or egg substitute
  • 1/4 cup canola oil
  • 1/3 cup dry skim milk
  • 1 cup apple juice
  • 1 cup chopped apple
  • 1 cup raisins

Instructions

  1. Sift together flour, salt, baking powder, and cinnamon. Combine with oats and dry milk in a large mixing bowl.
  2. Mix beaten egg (or egg substitute), oil, chopped apple, raisins, and apple juice in a separate bowl.
  3. Add the wet ingredients to the dry ingredients and fold lightly until just moistened.
  4. Pour the batter into prepared muffin tins and bake at 375°F (190°C) for about 20 minutes or until golden brown.
