Ingredients

  • 1 cup raisins
  • 1 cup dried fruit, diced
  • 2 cups water
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 1 cup unsweetened applesauce
  • 2 tablespoons liquid sweetener
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine raisins, dried fruit, and water in a saucepan.
  3. Cook uncovered until water evaporates and fruit becomes soft.
  4. Set aside to cool.
  5. In a large mixing bowl, combine all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
  6. In a separate bowl, beat eggs and then mix in applesauce, liquid sweetener, oil, and vanilla.
  7. Add nuts to the cooled fruit mixture.
  8. Stir the fruit mixture into the dry ingredients until thoroughly blended.
  9. Pour the batter into a greased fluted tube pan.
  10. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
