Ingredients

  • 1/2 cup honey
  • 1/4 cup canola oil
  • 2 eggs
  • 3/4 to 1 cup pumpkin
  • 1 2/3 cups whole-wheat flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup raisins

Instructions

  1. Combine honey, canola oil, eggs, and pumpkin in a bowl and beat until well mixed.
  2. Sift together whole-wheat flour, baking powder, baking soda, ground cloves, cinnamon, and nutmeg.
  3. Add the dry ingredients to the creamed mixture and blend until just combined.
  4. Fold in the washed, parboiled, and drained raisins.
  5. Pour the batter into greased muffin cups or tins, avoiding dark tins to prevent burning.
  6. Bake in a preheated 400°F (200°C) oven for 15 minutes.
  7. Allow muffins to cool for 5 minutes before removing to a wire rack to cool completely.
