Ingredients

  • 1 package beef flavored rice mix with vermicelli
  • 1 lb beef stew meat, sliced thin
  • 2 Tbsp vegetable oil
  • 1 medium onion, sliced
  • 1 (4 oz) can mushroom stems and pieces, drained
  • 1 large green pepper, cubed
  • 2 stalks celery, thinly sliced
  • 1 (14 oz) can bean sprouts, drained
  • 1 (10 oz) package frozen chopped spinach, drained

Instructions

  1. Prepare the beef flavored rice mix with vermicelli according to the package directions.
  2. Meanwhile, in a large frypan, brown the sliced beef stew meat in hot vegetable oil.
  3. Add the sliced onion to the pan, cover, and cook for 10 to 15 minutes.
  4. Add the drained mushroom stems and pieces, cubed green pepper, sliced celery, drained bean sprouts, drained chopped spinach, and soy sauce to the pan.
  5. Cover and cook for an additional 5 to 8 minutes until the vegetables are crisp-tender.
  6. Add the cooked rice mixture to the pan and stir to combine.
  7. Serve hot, garnished as desired.
