Ingredients

  • 2 medium zucchini, thinly sliced
  • 1 large can peeled tomatoes (32 oz.)
  • 1 lb. sweet sausage
  • 2 cans beef broth
  • 1 cup water
  • 1 medium onion, chopped fine
  • oregano
  • salt

Instructions

  1. Brown chopped onion and sausage in a soup pan, then slice the sausage into thin pieces.
  2. Add the peeled tomatoes, beef broth, water, oregano, salt, and pepper to the pan; bring to a boil.
  3. Crush the tomatoes with a spoon while cooking.
  4. Reduce heat to a simmer and cook until the zucchini is tender.
  5. Serve hot with fresh grated Parmesan cheese sprinkled over the top.
  6. For a healthier version, cool the soup and skim the fat off the top.
  7. Freeze any leftovers for later use.
