Ingredients

  • 16 oz. can chopped tomatoes
  • 3 Tbsp. vegetable oil
  • 1/4 cup chopped parsley
  • 1/2 tsp. dried basil
  • 3 cloves garlic, crushed
  • pinch of red pepper
  • freshly ground black pepper to taste
  • 8 oz. pasta (ziti or corkscrew)
  • 1/4 lb. shredded Mozzarella cheese

Instructions

  1. In a large serving bowl, mix all ingredients except pasta and cheese.
  2. Cook pasta according to package directions.
  3. Toss cooked pasta with the tomato mixture.
  4. Chill the pasta salad.
  5. Add shredded mozzarella cheese before serving and toss gently.
