Ingredients

  • 1 large onion, chopped
  • 1 c. uncooked rice
  • 4 tomatoes, peeled and chopped
  • 1 1/2 c. beef consomme
  • 1 eggplant, peeled and cubed
  • 1 green pepper, chopped
  • 3 medium summer squash, sliced
  • 1 Tbsp. vegetable oil

Instructions

  1. Oil a covered casserole large enough to hold the mixture.
  2. Combine rice and vegetables in the casserole.
  3. Pour consomme over the mixture.
  4. Cover the casserole.
  5. Put in the oven and bake at 350°F for 45 minutes.
  6. Remove casserole from the oven.
  7. Stir gently and return to the oven, uncovered, for about 15 minutes or until the liquid is absorbed.
