Ingredients

  • 3 oz. onion, diced small
  • 2 1/2 oz. celery, diced small
  • 1 1/2 oz. leeks, diced small
  • 1 clove garlic, minced
  • 2 qt. chicken stock
  • 1 1/2 lb. sweet potatoes, diced, boiled and coarsely whipped
  • 1 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 1/2 tsp. salt
  • 1/2 pt. half and half cream
  • 1 tsp. maple syrup

Instructions

  1. Put all of the ingredients in a large pot and cook for one hour.
  2. Stir occasionally during cooking.
  3. Transfer the soup to a tureen and serve hot.
  4. Replenish the soup as needed during serving.
  5. Sit back and enjoy!
