Ingredients

  • 5 slices bacon
  • 1 onion, chopped
  • 1 lb. fresh spinach, stemmed and chopped
  • 2 eggs
  • 3 egg whites
  • 2 cloves garlic, minced
  • 4 Tbsp. grated Parmesan cheese
  • 1/4 c. dry white wine
  • 1/2 tsp. coarse ground black pepper
  • dash of salt
  • 1 tsp. olive oil

Instructions

  1. Heat bacon in a heavy saucepan over medium heat until cooked.
  2. Add garlic and chopped onion; cook over low heat until browned.
  3. Add chopped spinach and cook until wilted.
  4. In a large bowl, beat eggs and egg whites; stir in wine, salt, black pepper, and 2 tablespoons Parmesan cheese.
  5. Combine the spinach and bacon mixture with the egg mixture.
  6. Heat olive oil in a medium nonstick skillet over low heat.
  7. Pour the egg mixture into the skillet and cook for 15 minutes or until set, without stirring.
  8. Sprinkle the remaining Parmesan cheese on top.
  9. Broil for 3 minutes until the top is set and golden.
