- In a large bowl, beat eggs and egg whites; stir in wine, salt, black pepper, and 2 tablespoons Parmesan cheese.
- Combine the spinach and bacon mixture with the egg mixture.
- Heat olive oil in a medium nonstick skillet over low heat.
- Pour the egg mixture into the skillet and cook for 15 minutes or until set, without stirring.
- Sprinkle the remaining Parmesan cheese on top.
