- Crumble the cornbread and set aside.
- Sauté chopped celery and onion until tender.
- Mix the crumbled cornbread, sautéed vegetables, chopped cooked chicken, chicken broth, cream of chicken soup, chicken and rice soup, salt, and pepper in a bowl.
- Grease a 3-quart baking dish.
- Pour half of the mixture into the prepared baking dish.
- Spread and cover with additional chopped cooked chicken.
- Top with the remaining mixture.
- Bake at 350°F for 55 minutes until hot and bubbly.
