Ingredients

  • 5 cups cornbread
  • 4 cups chopped cooked chicken
  • 1 1/2 cups chicken broth
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 can cream of chicken soup
  • 1 can chicken and rice soup

Instructions

  1. Crumble the cornbread and set aside.
  2. Sauté chopped celery and onion until tender.
  3. Mix the crumbled cornbread, sautéed vegetables, chopped cooked chicken, chicken broth, cream of chicken soup, chicken and rice soup, salt, and pepper in a bowl.
  4. Grease a 3-quart baking dish.
  5. Pour half of the mixture into the prepared baking dish.
  6. Spread and cover with additional chopped cooked chicken.
  7. Top with the remaining mixture.
  8. Bake at 350°F for 55 minutes until hot and bubbly.
