Ingredients

  • 8 slices bacon
  • 1 quart washed, torn spinach
  • 2 cups sliced mushrooms
  • 1 cup red onion rings
  • 1 (10 oz.) package frozen peas
  • 1 cup mayonnaise
  • 1/2 teaspoon sugar
  • 1 teaspoon curry powder
  • dash of pepper

Instructions

  1. Remove stems from the spinach.
  2. Layer the spinach, sliced mushrooms, red onion rings, and frozen peas in a large bowl.
  3. Mix mayonnaise, sugar, pepper, and curry powder to make the dressing.
  4. Pour the dressing over the layered salad.
  5. Cover with foil and refrigerate overnight.
  6. Before serving, top the salad with cooked, crumbled bacon.
