Ingredients

  • 3 eggs, beaten
  • 1 cup oil
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2 cups grated zucchini
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 cup chopped nuts
  • 3 teaspoons vanilla extract

Instructions

  1. Mix all ingredients as listed.
  2. Pour batter into prepared mini-loaves.
  3. Bake at 325°F for 1 hour.
