Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 2 cups flour
  • 3/4 cup finely ground pecans
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar together until light and fluffy.
  3. Separate eggs; add yolks to the creamed mixture one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, ground pecans, baking powder, and salt.
  5. Gradually add dry ingredients to the butter mixture alternately with milk, beginning and ending with dry ingredients.
  6. Stiffly beat egg whites until stiff peaks form, then gently fold into the batter.
  7. Add vanilla extract and fold to combine.
  8. Pour batter into prepared cake pans and bake until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool before assembling and frosting.
