Instructions
- Coat chicken with flour; shake off excess.
- In a large skillet, heat salad oil and butter until hot.
- Add chicken; sauté over medium heat until browned and cooked through, about 20 to 25 minutes. Remove chicken to a serving platter; keep warm.
- Drain off all but 1 tablespoon of drippings from the skillet.
- Add chopped onion to the skillet; sauté until tender.
- Stir in red wine vinegar and tomato paste; bring to a boil, stirring constantly.
- Blend in heavy cream or half and half; cook and stir until thickened, about 3 minutes.
- Stir in Worcestershire sauce and salt; heat until hot.
- Spoon the sauce over the cooked chicken and serve.
