Ingredients

  • 2 pounds ground raw turkey
  • 1 1/2 chopped onion
  • 1 clove minced garlic
  • 2 1/2 cups water
  • 1 to 2 tablespoons chili powder
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon paprika
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 2 16-ounce cans red kidney beans, drained
  • 2 4-ounce cans mushrooms stems and pieces
  • 1 14 1/2-ounce can diced tomatoes with green chiles
  • 1 bay leaf

Instructions

  1. Brown the ground turkey, chopped onion, and minced garlic in a large pot, then drain drippings.
  2. Add water, chili powder, dried parsley flakes, paprika, dry mustard, salt, drained kidney beans, mushrooms, diced tomatoes with green chiles, and the bay leaf to the pot.
  3. Bring the mixture to a boil, then cover and reduce heat to simmer for 1 hour.
  4. Uncover and continue to simmer for an additional hour, stirring occasionally.
  5. Discard the bay leaf before serving.
