A flavorful layered Mexican-inspired lasagna with salsa, chicken, cheeses, and tortillas, perfect for a quick, hearty meal that serves six people.

Ingredients

  • 14 oz. ready cut salsa
  • 2 c. cooked and chopped chicken
  • 1/3 c. cilantro
  • 4 large corn tortillas
  • 8 oz. cottage cheese
  • 1 egg
  • 1 can diced green chilies
  • 2 1/2 oz. sliced olives
  • 3/4 c. shredded Jack cheese
  • 3/4 c. shredded Cheddar cheese

Instructions

  1. Mix the ready cut salsa, cooked and chopped chicken, and cilantro; spread one-third of the mixture in the bottom of a 7 x 11-inch microwave baking dish.
  2. Layer 2 corn tortillas on top of the salsa mixture.
  3. Combine cottage cheese, egg, diced green chilies, sliced olives, and half of the shredded Jack and Cheddar cheeses; spoon half of this mixture over the tortillas.
  4. Repeat the layers with remaining ingredients, ending with the salsa mixture on top.
  5. Cover the dish with plastic wrap and microwave on High for 10 to 12 minutes, rotating the dish during cooking.
  6. Remove the plastic wrap and sprinkle with the remaining shredded cheese.
  7. Let stand until the cheese melts, then cut into squares and serve.
