Swedish Cakes are delicate, nut-filled cookies with a buttery texture and jam center, perfect for festive occasions or a delightful treat with afternoon tea.

Ingredients

  • 1/2 cup shortening
  • 1/4 cup sugar
  • 1 egg yolk
  • 1 egg white
  • 1 cup flour
  • 3/4 cup nuts
  • Jam for filling

Instructions

  1. Cream shortening and sugar until light and fluffy.
  2. Beat egg yolk slightly and add to the mixture.
  3. Blend in flour until well combined.
  4. Form the dough into 1-inch balls.
  5. Finely chop the nuts.
  6. Dip each ball into beaten egg white, then roll in chopped nuts.
  7. Place on a greased cookie sheet and press fairly flat with a glass.
  8. Bake in a slow oven at 300°F (150°C) for 5 minutes.
  9. Remove from oven and press the center of each cookie down.
  10. Bake for an additional 15 minutes.
  11. Cool the cookies and fill with jam before serving.
