Swedish pancakes are light, tender, and subtly flavored with nutmeg, perfect for breakfast or brunch. Topped with fruit, powdered sugar, and whipped cream, they delight the senses.

Ingredients

  • 1/2 cup flour
  • 1/2 cup milk
  • 2 eggs
  • dash of nutmeg
  • 4 tablespoons margarine
  • sifted powdered sugar
  • fresh or frozen fruit
  • whipped cream

Instructions

  1. Mix the flour, milk, eggs, and nutmeg until the batter is lumpy.
  2. Melt the margarine and add it to the batter.
  3. Pour the batter into a buttered baking dish.
  4. Bake in a preheated oven at 425°F (220°C) for 15 minutes.
  5. Remove from oven and sprinkle with powdered sugar.
  6. Bake for another 2 to 3 minutes.
  7. Serve hot, topped with fresh or frozen fruit and whipped cream.
