Ingredients

  • 2 green onions, thinly sliced
  • 1 tsp vegetable oil
  • 1/4 cup low-salt chicken broth
  • 1 lb shrimp, shelled and deveined
  • 2 Tbsp low-fat sour cream
  • 2 Tbsp Dijon mustard
  • 1 tsp cornstarch
  • 1/8 tsp pepper
  • 1/4 cup chopped fresh dill
  • 1/2 tsp fresh lemon juice

Instructions

  1. Saute green onions in vegetable oil in a nonstick skillet until softened, about 2 minutes.
  2. Add 3/4 cup of low-salt chicken broth and bring to a boil.
  3. Add shrimp to the skillet and reduce heat to simmer.
  4. Cover and cook until shrimp turn pink, about 3 minutes.
  5. Stir in low-fat sour cream, Dijon mustard, cornstarch, pepper, chopped dill, and lemon juice.
  6. Cook briefly until sauce is heated through and slightly thickened.
  7. Serve immediately.
