Ingredients

  • 4 oz. boneless smoked pork chop
  • 1 medium onion
  • 2 bell peppers
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. whole-grain mustard
  • 2 tsp. salt
  • 1 tsp. chili powder
  • 1/3 c. prepared barbecue sauce
  • 1/4 c. light brown sugar
  • 15 oz. can pinto beans
  • 15 oz. can white beans

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium saucepot, cook the pork chop, chopped onion, and diced bell peppers in olive oil over medium-high heat for 7 minutes.
  3. Remove from heat and stir in the remaining ingredients: mustard, salt, chili powder, barbecue sauce, and brown sugar.
  4. Transfer the mixture to an 11 x 7-inch baking or casserole dish.
  5. Bake for 30 minutes or until the beans are tender.
  6. Serve hot and enjoy.
