Ingredients

  • 1 peck green tomatoes
  • 15 lb. onions
  • 15 lb. cabbage
  • 10 to 15 green and red sweet peppers
  • 3/4 cup non-iodized salt
  • 6 pt. vinegar
  • 6 pt. sugar
  • 4 Tbsp. allspice

Instructions

  1. Grind the green tomatoes, onions, cabbage, and sweet peppers together.
  2. Pour the salt over the mixture and mix thoroughly.
  3. Place the mixture in a cloth bag (such as a pillowcase) and hang outside to drain overnight.
