Ingredients

  • 1 1/2 cups sifted flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 3/4 cup milk
  • 2 tablespoons cooking oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon grated lemon peel (optional)

Instructions

  1. Sift together the flour, sugar, baking powder, and salt.
  2. Combine the eggs, milk, cooking oil, vanilla, and grated lemon peel (if using) and beat well.
  3. Add the dry ingredients to the wet mixture and beat just until free of lumps.
  4. Prepare fresh or canned fruit, wash and dry them, then dust each piece with flour.
  5. Slip the floured fruit into the batter and fry in 2 to 3 inches of hot oil at 375°F until golden brown on both sides, turning once.
  6. Drain on paper towels before serving.
