- Sift together the flour, sugar, baking powder, and salt.
- Combine the eggs, milk, cooking oil, vanilla, and grated lemon peel (if using) and beat well.
- Add the dry ingredients to the wet mixture and beat just until free of lumps.
- Prepare fresh or canned fruit, wash and dry them, then dust each piece with flour.
- Slip the floured fruit into the batter and fry in 2 to 3 inches of hot oil at 375°F until golden brown on both sides, turning once.
- Drain on paper towels before serving.
