Ingredients

  • 1 cup finely crushed crackers
  • 4 tablespoons butter melted
  • 6 slices bacon cooked drained and crumbled
  • 2 tablespoons bacon drippings
  • 1 cup chopped onion
  • 8 ounces natural Swiss cheese shredded
  • 2 slightly beaten eggs
  • 3/4 cup dairy sour cream
  • 1/2 teaspoon salt
  • dash of pepper
  • 2 ounces sharp process American cheese shredded

Instructions

  1. Preheat oven to 375°F.
  2. Combine cracker crumbs and melted butter.
  3. Press into bottom and sides of an 8-inch pie plate.
  4. Cook bacon; drain and crumble.
  5. Pour off all but 2 tablespoons bacon drippings.
  6. Add chopped onion to drippings and cook until tender.
  7. Add bacon, onion, Swiss cheese, eggs, sour cream, salt, and pepper to the mixture.
  8. Pour the mixture into the prepared pie shell.
  9. Sprinkle with shredded American cheese.
  10. Bake for 25 to 30 minutes, until a knife inserted comes out clean.
  11. Let stand for 5 to 10 minutes before serving.
  12. Cut into slices and serve.
