A hearty Swiss-style chuck roast featuring tender beef, tomatoes, mushrooms, and savory onion soup flavors, perfect for comforting family dinners or weekend gatherings.

Ingredients

  • 14 oz. can diced tomatoes
  • 1 envelope onion soup mix
  • 6 oz. jar sliced mushrooms, drained
  • 1 tsp. Worcestershire sauce
  • 2 lb. chuck or blade roast, cut into serving size pieces
  • 1 Tbsp. cornstarch
  • 1 Tbsp. catsup
  • cherry tomatoes
  • fresh parsley

Instructions

  1. Drain diced tomatoes, reserving the juice.
  2. Place a large piece of foil on a baking sheet.
  3. Place the beef on the foil and sprinkle with onion soup mix.
  4. Top the beef with the drained tomatoes and sliced mushrooms.
  5. Cover the beef with foil and bake until tender, approximately 2 hours.
  6. Mix cornstarch with catsup and Worcestershire sauce to make a sauce.
  7. Add the sauce to the baking dish during the last 15 minutes of cooking.
  8. Garnish with cherry tomatoes and fresh parsley before serving.
