  2. Stir in chopped onion, minced garlic, chopped green pepper, canned tomatoes, whole kernel corn and liquid, and halved pitted ripe olives.
  3. Cover and cook for about 25 minutes, stirring occasionally.
  4. Uncover and cook for an additional 10 to 15 minutes.
  5. Meanwhile, cook noodles until tender and drain.
  6. Add cooked noodles to the meat and vegetable mixture before serving.
  7. Stir in grated cheese if desired before serving.
