Ingredients

  • 1 1/2 lb. boneless venison steak
  • 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c. bacon drippings
  • 2 large onions, sliced
  • 2 c. hot water
  • 1 (16 oz.) tomato sauce
  • 2 carrots, shredded
  • 1 green pepper, chopped
  • 1 stalk celery, chopped
  • 1 Tbsp. sugar
  • 1 Tbsp. Worcestershire sauce

Instructions

  1. Trim excess fat from the venison and cut into serving-sized pieces.
  2. Pound the venison to 1/4-inch thickness.
  3. In a shallow dish, combine all-purpose flour, salt, and pepper.
  4. Dredge the venison pieces in the flour mixture, coating well.
  5. In a large skillet, heat bacon drippings over medium heat.
  6. Add sliced onions and cook until golden brown.
  7. Add the floured venison pieces and brown on all sides.
  8. Pour in hot water and tomato sauce, stirring to combine.
  9. Add shredded carrots, chopped green pepper, and chopped celery.
  10. Stir in sugar and Worcestershire sauce.
  11. Reduce heat, cover, and simmer for about 45-60 minutes until the venison is tender.
  12. Serve hot with your choice of side dishes.
