  • 1 lb. spinach leaves, washed, drained and cut in 1-inch pieces
  • 3/4 cup firm tofu
  • 1 (8 oz.) can sliced water chestnuts, drained
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp. dark sesame oil
  • 2 Tbsp. rice vinegar
  • 1 1/2 tsp. crushed red pepper flakes
  • 1 tsp. minced ginger root

Instructions

  1. In a 5-quart saucepan, over high heat, bring 3 quarts of water, salt, and 1 tablespoon of vegetable oil to a rolling boil.
  2. Add the pasta and stir to separate the strands.
  3. Cover the pan until the water returns to a boil.
  4. Uncover and cook the pasta for 7 to 9 minutes or until al dente.
  5. Pour hot pasta and water into a colander set in the sink and drain thoroughly.
  6. Rinse the pasta with cold running water and drain again.
  7. Transfer the cooled pasta to a large bowl and set aside.
