  • 1 lb. string beans, tips cut off

  • 2 Tbsp. lemon juice
  • 3/4 cup soy sauce
  • 1/4 cup sherry cooking wine
  • 1/4 cup cornstarch or potato starch
  • 1 Tbsp. cooking oil
  • 1 cup broccoli florets (optional)

Instructions

  1. Spray a wok or skillet with nonstick spray.
  2. Pour a tablespoon of cooking oil into the wok and heat over low heat.
  3. When the oil becomes hot, add the green beans and some onions, and stir.
  4. After about 3 minutes, add the rest of the green beans and onions, and continue to stir.
  5. After about 2 minutes, add all the mushrooms (and broccoli florets if using), and stir until the vegetables lose their rawness.
  6. Chop the hot chili peppers into very small sections and add them to the wok, then stir.
  7. Add the chopped garlic, ground ginger, lemon juice, soy sauce, and sherry cooking wine; stir for 30 seconds.
  8. Cover the wok and cook for 3 minutes.
  9. Lift the cover and gradually add the cornstarch, stirring to create a gravy.
  10. Cook until the gravy reaches your desired consistency, then serve.
