Ingredients

  • 1 c. medium fine bulgur wheat
  • 1/2 c. olive oil
  • juice of 4 lemons (3/4 c.)
  • 1 bunch scallions (including green part)
  • 2 large bunches parsley
  • 4 large tomatoes
  • 1 small bunch celery
  • 2 small cucumbers
  • vegetable salt to taste

Instructions

  1. Finely chop the scallions, parsley, tomatoes, celery, and cucumbers.
  2. In a large crock, place a layer of medium fine bulgur wheat.
  3. Add olive oil and lemon juice over the wheat layer.
  4. Layer the chopped vegetables in the order listed: scallions first, then tomatoes, celery, and cucumbers last.
  5. Sprinkle vegetable salt on top.
  6. Cover the crock loosely and refrigerate for 24 hours to 2 weeks.
  7. Toss well to mix before serving and check seasoning.
