Ingredients

  • 1 cucumber
  • 1 1/2 cups tabuli
  • 3 ripe tomatoes
  • 1/2 cup lemon juice
  • 5 green onions
  • 1 green bell pepper
  • 1/2 cup oil
  • 1 teaspoon salt

Instructions

  1. Soak the tabuli (bulgur wheat) in oil and lemon juice while cutting up the vegetables.
  2. Mix all remaining ingredients together with the wheat mixture.
  3. Cover and let stand in the refrigerator for 2 hours or overnight.
  4. Serve chilled; it gets better as time goes on.
