Stu'S Gazpacho

Ingredients
- 1 c. chopped tomato ⓘ
- 1/2 c. red and green onion ⓘ
- 1 c. cucumber ⓘ
- 1 c. red and green pepper ⓘ
- 1/3 c. Anaheim pepper ⓘ
- 1 c. celery ⓘ
- 1/3 c. parsley, chopped ⓘ
- 2 cloves garlic, minced ⓘ
- 2 c. tomato juice ⓘ
- 3 Tbsp. red sherry wine vinegar
- 1/2 c. white wine ⓘ
- 1/2 Tbsp. cumin ⓘ
- 2 Tbsp. basil ⓘ
- 1 Tbsp. lemon juice ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. white pepper ⓘ
- 1 Tbsp. Worcestershire sauce ⓘ
Instructions
- Finely chop all vegetables, preferably using a food processor.
- Combine the chopped vegetables with all remaining ingredients in a large bowl.
- Mix well and refrigerate for 24 hours to allow flavors to meld.
- Serve the chilled soup in bowls, garnished with chives, croutons, or nonfat sour cream.
