Crispy taco baskets filled with seasoned beef, fresh lettuce, and cheesy sauce, perfect for a flavorful, handheld meal that appeals to both kids and adults alike.

Ingredients

  • 1 lb. ground chuck
  • 1 pkg. taco seasoning
  • 1 can refried beans
  • 3/4 c. water
  • oil (for frying)
  • 1 head lettuce
  • 1 pkg. extra large flour tortillas
  • 1 pkg. cheese sauce mix
  • 1 c. milk
  • chopped green onions

Instructions

  1. Brown the ground chuck in a skillet over medium heat.
  2. Drain excess fat from the cooked beef.
  3. Add taco seasoning, refried beans, and water to the beef.
  4. Simmer the mixture for 15 minutes, stirring occasionally.
  5. Heat oil in a deep fryer or large pot until hot.
  6. Carefully drop a tortilla shell into the hot oil and fry until it curls up and turns light brown.
  7. Use a clean, emptied one-pound coffee can to hold the shell upright while frying.
  8. Drain the fried shell on paper towels and set aside.
  9. Repeat frying with remaining shells and drain on paper towels.
  10. Prepare cheese sauce by blending cheese mix with milk and stirring over medium heat for 7 minutes until thick.
  11. Fill each fried shell half full of chopped lettuce.
  12. Top with the seasoned beef mixture.
  13. Pour cheese sauce over the meat and garnish with chopped green onions.
