Ingredients

  • 2 lb. ground beef
  • 1 egg
  • 1/2 onion, diced
  • 1 (8 oz.) can tomato sauce
  • 1 package taco seasoning
  • 1 (8 1/2 oz.) package cornmeal muffin mix
  • 2 Tbsp. sliced olives
  • 1 can corn
  • 1 cup Velveeta cheese

Instructions

  1. Combine ground beef, egg, diced onion, tomato sauce, and taco seasoning in a skillet and cook until browned and done.
  2. Prepare the cornmeal muffin mix according to the package instructions.
  3. Layer the cooked meat mixture at the bottom of a baking dish, then add the canned corn and sliced olives.
  4. Spread the prepared muffin batter over the layered ingredients.
  5. Bake at 400°F (200°C) for 15 minutes or until the top is golden and cooked through.
