Ingredients

  • 1 lb. ground beef
  • 1/3 cup salsa
  • 1 1/2 tsp. chili powder
  • 2 cups elbow macaroni (uncooked)
  • 1/2 lb. Velveeta cheese, cut up
  • tortilla chips
  • green onion (optional)
  • tomatoes (optional)

Instructions

  1. Brown the ground beef in a large skillet and drain excess fat.
  2. Stir in 2 3/4 cups water, salsa, and chili powder; bring to a boil.
  3. Stir in the uncooked macaroni, cover, and simmer for 10 minutes or until water is almost absorbed.
  4. Add Velveeta cheese and stir until melted and creamy.
  5. Top with crushed tortilla chips before serving.
