Taco Noodle Dinner

Ingredients

  • 1 lb. hamburger
  • 1/4 c. chopped onion
  • 3/4 c. water
  • 1 envelope taco seasoning
  • 1/2 tsp. salt
  • 1 (4 oz.) can mushrooms, drained
  • 3 c. uncooked fine egg noodles
  • 2 1/2 to 3 c. tomato juice
  • 1 c. sour cream
  • 1 Tbsp. minced fresh parsley

Instructions

  1. In a large skillet over medium heat, cook the beef and onion until meat is no longer pink; drain. Stir in the water, taco seasoning and salt. Reduce heat; simmer for 2 to 3 minutes. Add mushrooms. Sprinkle noodles over the top. Pour
  2. tomato juice over the noodles and stir gently. Cover and simmer for 20 to 25 minutes or until noodles are tender. Remove from the heat. Combine the sour cream and parsley; spread over the top. Cover and let stand for 5 minutes. Yields 6 servings.
