Ingredients

  • 1 lb ground beef chuck
  • 2 cloves garlic minced
  • 1 (4 oz) can mild green chilies finely chopped and drained
  • 1 (1 lb) can whole peeled tomatoes packed in juice undrained
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 or 2 heads lettuce
  • 4 oz Cheddar cheese
  • 1 medium-sized tomato
  • 1 package tortilla chips or corn chips
  • Black olives sliced

Instructions

  1. In a medium skillet, brown the ground beef with minced garlic.
  2. Drain excess fat from the skillet.
  3. Add chopped green chilies and undrained whole tomatoes with the meat.
  4. Uncover and simmer for 30 minutes.
  5. Shred the cheese and lettuce.
  6. Chop tomatoes and scallions.
  7. In a large bowl, place the lettuce and arrange chips around the outer edge.
  8. Place the cooked meat on top of the lettuce.
  9. Sprinkle shredded cheese over the meat.
  10. Add chopped onions, tomatoes, and sliced black olives.
  11. Top with sour cream before serving.
